We still have a few days left before the new year, so let’s live it up and get that diet back on track in a week, shall we?
Everyone knows that sweets just simply seem to be a part of the holidays. But this vegan chocolate chip cookie pie (yeah, you read that right) recipe is a sweet treat that will satisfy that holiday sweet tooth but won’t totally blow your diet after the new year either.
This chocolate chip pie recipe comes from my friend Derek Markham’s website, Natural Papa. Derek says,
Food is a big deal at our house. It’s our health plan and our insurance and our future. We feel very strongly that food is the foundation for all the body’s needs, and our kids deserve to eat real, whole, natural foods. Not from a box or a can or an aluminum tray, with all sorts of dubious substances added.
This is a vegan recipe, though you can’t tell a difference in the taste (omnivores eat them up just as fast).
The Chocolate Chip Cookie Pie Recipe
(preheat oven to 350°F)
- 1 cup quick oats
- 1 cup whole wheat flour
- 1 Tablespoon water
- 1/2 cup olive oil (or your choice)
- 1/2 cup maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- shredded coconut to taste
- 1 cup chocolate chips
- (and whatever else you need in there to get your fix)
