After being a stay-at-home mom for the past two-and-a-half years, I’ve sorta re-entered the workforce. I’m working one day a week in the offices of Principia Media, a publishing house that I’m helping launch with my step dad, mom and another talented gentleman from the publishing world, in addition to working on various projects for Principia from my home.
During this morning’s “gettin’ ready rush” I experienced a massive sense of deja vu while trying plan my lunch. I’ve committed myself to more whole foods, so a quick jaunt to Subway wasn’t going to cut it – I needed to brown bag (or, in my case, orange/gray reusable bag) it.
I recently purchased Eden’s Spicy Toasted Nori Strips because I love the taste of nori, and so does my daughter. I remembered that I had some cut-up cucumber, scallions, avocado and carrots leftover from a healthy nori sushi recipe and decided that it was a match made in madness. I took a small strip of nori and wrapped it around a bunch of julienned veggies, napkin-ring style, and chomped away.
